1. Guacamole

Mix the avocados, with chopped red onion, chopped jalapeno, grated garlic, half of the chopped cilantro, tomatoes, the juice of lime and season with salt. Mix it together in a bowl with a fork or in a mortar. Set aside.

2. Pico de Gallo

Mix the tomatoes, chopped fresh cilantro, chopped red onion, minced or grated garlic and chopped jalapeno and cucumber. Squeeze in one whole lime and season with salt.

3. Marinade and Cooking the Salmon

Mix together avocado oil, the chipotle powder, minced or grated garlic with cumin, the juice of lime and the peel from the double amount of limes as juice.

Marinate the Salmon before sticking the filets pieces on the skewers. Grill the fish on high heat 2-3 minutes. Brush it with oil and season with salt before grilling. Brush it with the same marinade after grilling.

4. Serving

Serve up the lettuce leaves with all the condiments and combinate them at your preference. For example fresh cilantro and pickled onions and serve with wedges of lime.
