As successful restaurants often do, Taps Fish House & Brewery in Brea has drawn other businesses into its orbit, making the city’s formerly sleepy, if nicely redeveloped, downtown district something of a destination. Taps remains the big dog, but is not resting on its laurels. New menu items include the introduction of Skuna Bay “craft raised,” sustainably farmed salmon from Vancouver Island. A big advantage of the Skuna Bay salmon is its year-round availability, though at a recent preview, Tom Hope, director of culinary for the restaurant, said they also serve wild salmon in season, including the rare ivory king when available.

GOLD RIVER, BC— Beginning on June 18, 2012, Skuna Bay Salmon will be available in western Pennsylvania and Ohio, as the craft raised salmon continues its steady growth into new markets. Skuna Bay Salmon is now available throughout the Southwest, West, Midwest and Great Lakes regions of the United States. North America’s only craft raised salmon can be found at more than 225 high-end restaurants in major urban markets including: Los Angeles, San Diego, Phoenix, Las Vegas, Palm Springs, Chicago, St. Louis, Denver, Detroit, Milwaukee and Indianapolis.

Skuna Bay Salmon will be exclusively offered by local wholesaler Euclid Fish Co. to western Pennsylvania and Ohio’s best restaurants in locations, including Pittsburgh, PA; Columbus, Cleveland and Cincinnati, OH and Louisville, KY.

“Skuna Bay Salmon has been expanding into new markets throughout the country and we continue to be thrilled by the overwhelmingly positive response from chefs,” said Stewart Hawthorn, Head Farmer at Skuna Bay. “Partnering with a trusted source like Euclid Fish Co. will allow Skuna Bay to offer our premium fish to the top chefs in the area and help us reach our goal to expand Skuna Bay availability to the entire continental United States.”
